Remembering Dick

IMG_4531Alesya and I stopped in to see Dick and Bev with a FaceTime video call to Charlene, as she unable to make it to Phoenix. We gad a few laughs and talked about the good times when we were all together.

IMG_4530Charlene asked us to pick up a rainbow cake from Chompie's, a place of fond memories for Dick, Bev, Charlene and the family. I have to say, Bev was right, the cake was great!

DSC_0019Dick would talk highly of his family and friends constantly, and when I finally got to meet some of them, it felt like I knew them already. Dick's daughter Charlene and I have bonded and are best friends because of Dick. Dick had a talent of uniting people with love, food and kindness. I am blessed to have got so much time with Dick over the years and now Charlene.

IMG_4558That evening Alesya and I continued our celebration of Dick and visited one of his favourite resaturates, Las Glorias Grill. The food here is the best Mexican food I have had (at a restaurant) and the place holds so many memories for all of us. Often before or after board meetings, we would stop in to Las Glorias and order our usuals. I am so glad Alesya and I were able to make this happen, rounding out the day with food, fun, friends and more memories. Isn't that what it's about?!?!?

IMG_4560This is my go to dish, two grilled chicken enchiladas topped with sauce, melted cheese, lettuce, pico de gallo and cotija cheese on a bed of grilled peppers and onions. YUM!

It was so great to reconnect with Alesya and spend time together planning on attending a festival or two and Vegas. Thanks Alesya for an amazing day, and for suggesting OHSO on E Shae Blvd for Cody to join us. Cody loved the dog bowl of water and his turkey burger. They also have some awesome dog cookies to take home with you. Good fun had by all!

I am so thankful for being able to share this Valentine's Day with Darrel and Cody here in Arizona. We are more than 3/4 way through our journey this year and we have seen and done so many amazing things. I can't imagine doing something like this without them! Love you lots!

A New Year, A New Beach

While Christmas shopping, someone pointed out that Chastain Beach would be a great place to visit and see the surfers and is close by. Darrel, Cody and I decided to take a some time and drive 40 minutes to check out the beach, and I am sure glad we did. The road to the beach takes you across many bridges and down narrow windy streets along the beach houses and sand dunes. Happy New Year everyone! Stay safe and happy trails.

Cody's 13th Birthday In Florida

How awesome is it that you can celebrate a milestone and visit a beach on the same day (when you are from Canada). Cody was the inspiration for us to purchase a motorhome so we could travel with him. This trip across Canada and the United States has been rewarding and amazing as we have been together for three months now and loving every day together. It's about building memories with the three of us. Here is to you Cody! Thanks for the love you give and the light you bring to our lives every day! We love to you to the moon and back.

Christmas Under The Sun

This time of year normally is spent at home with family, friends, snow and winter. This year was different and I must say I feel blessed being able to travel in our motorhome and be with Cody in a warm place at Christmas time. In the past, we have flown and were not able to travel with Cody, so this amazing that the three of us are together. No matter where you are, home is where your heart is and the spirit of Christmas fills your heart. Thank you to our family and friends for supporting us on our journey and know that all of you are here with us in spirit, memory and in our heart. Merry Christmas!

Tonight we celebrated with my Mom and Maria (our Mom next door). Again more laughs, love and good times. This journey will be hard without seeing our Moms everyday but thank goodness for FaceTime.

It was wonderful having an evening out at Pampa with Christian and Courtney. Good food, but most importantly some laughs, reminiscing and cherishing our time together. My nieces and nephews have always been am important part of my life and, I cherish each and every one of them.

Birthday Cake - On Cody's Bed

Why on Cody's bed you ask? Because we have no furniture left in the house. It was still great celebrating Darrel's birthday with both our Mom's and Cody. Yes, I made (well unpackaged) the mini angel food cakes and copped the fresh peaches. At no time was Darrel required to help prepare his Birthday Cake! Happy Happy Birthday Darrel - Cody and I love you to the moon and back! Thank you for all that you do and we both can't wait to start our retirement journey this fall with you. Xo Xo Xo

Happy Cinco de Mayo

Please don't judge the sloppy tacos. As Mexico and our Mexican friends celebrate independence, we join the celebration and spend time together as I work on getting better and continue doing tests at the hospital. It has become clear that my family comes first and I need to start planning our Journey. We have decided to start downsizing and planning for Darrel's retirement and how that will look. Happy, healthy, exciting times to come. Thanks Mom, Courtney and Christian for all the love and support as we follow our dreams.
